Coconut Chia Berry Pudding

Serve cold. Top with your favourite fruit such as selection of berries.
This healthy coconut chia berry pudding is full of healthy omega 3 fatty acids (good fats). It can be made overnight and then served cold in as a snack or even for breakfast.

Description

This Coconut Chia Berry Pudding is a perfect superfood breakfas, dessert or snack. It’s thick and rich in flavour and full of protein and fibre. Super EASY to make in just 15 minutes.

Chia seeds are exceptionally healthy and is an excellent source of Omega 3 fatty acids which help raise HDL cholesterol. They are high in protein and in fibre which helps with satiety, the feeling of fullness and rich in bone protecting minerals such as calcium and magnesium. Add these powerhouse seeds to any recipe.

 


Ingredients

Scale

625 ml coconut milk

75 g chia seeds

2 tbsp honey

1 tbsp lime juice

zest from one lime

1 tsp vanilla paste or extract

1/4 tsp nutmeg

250 g berries, your choice

coconut flakes

fresh mint


Instructions

Pour coconut milk into a large bowl. Stir in chia seeds, honey, lime juice, vanilla paste, nutmeg and lime zest.

Pour into individual serving pots or cups and refrigerate for several hours until thickened or overnight.

Top with fresh or frozen raspberries or strawberries.

Garnish with coconut flakes and fresh mint.

Use a variety of berries

Optional: Layer the coconut chai pudding with blueberry puree before topping with raspberries.

To make the blueberry puree, simmer blueberries in a small saucepan over the stove until they begin to soften and burst. Crush blueberries with a potato masher for a thicker puree mixture or into a blender to get a thinner consistency.
