Midlife Pancake Absolutely
There is nothing more moorish on the weekend than pancakes.
Do you love pancakes but no longer eat them because you are concerned about calories or think they are unhealthy?
The thing about midlife is that we need to enjoy food. It’s the essence of living. So yes, we need to be careful of piling on the pounds. However, there are many ways to experiment and bring new life to a traditional pancake batter and the toppings that go with it.
Spinach 🍃pancakes are the bomb. Add spinach to your pancake batter. Serve sweet with honey 🍯 or maple syrup or savoury with poached egg & smoked salmon or with curry chickpeas for lunch—sautéed spinach with mushrooms and soft fried 🍳or poached egg.
Swap out white flour for wholewheat, chickpea, coconut, almond, quinoa, buckwheat flour.
Add overripe bananas🍌 to the batter.
Add blueberries 🫐to the batter.
Add chia seeds to jam or honey for omega 3 boost.
Top pancakes with bananas and drizzle melted dark chocolate🍫. Loaded with magnesium. Finish off with some walnuts 🥜(protein)
Add eggs to the batter, which is an excellent source of protein.
Serve pancakes with Greek yoghurt.
Sprinkle nuts and seeds ( flax, pumpkin whole or milled) for extra protein, fibre and phytoestrogens.
Remember, it’s essential to eat protein and fibre with each meal to keep blood sugar balanced and cravings at bay.
